Our “story” with Whistle Pig goes way back – even before they became this ‘cult’ whiskey legend. Their old master distiller David Pickerel was a friend to us & a loyal supporter of Restaurant Nicholas. Turns out he liked good food!!! To say David was a big deal in Kentucky would be the understatement of the year. How else do you think all my connections in Kentucky started? He’s the reason that Whistle Pig became the monster it is today.
The Boss Hog himself always made sure we had the best barrels for the restaurant. He & I even once blended a few barrels together. I kinda think he just wanted to drink together. Sadly the whisky world lost a legend a few years ago & I lost a friend. But the Whistle Pig brand is in good hands and quality has not suffered in the slightest.
Their latest release – SummerStock is a special limited collab with Pit Viper. They decided to team up for a summertime whiskey as a way to celebrate being 100% solar powered. To make it, they blended together Wheat and Rye Whiskeys and then finished them in a toasted barrel solara. It really is a great summer sipper that can be enjoyed straight up or a mixed drink like an Old-Fashioned or a Whiskey Sour.

Michter’s always provides some of the best value in American Whiskey and they never miss. This one is their best bang for the buck bottling that they make. This is so smooth and delicious, you would never know this is bottled at 84.8 Proof. This is a bit of a spicy number with those signature Rye peppery notes, butterscotch, creme brulee and a hint of toasted oak. One of my all-time favorite under $50 bottles.

“Deep garnet-purple colored, the nose slowly unfurls to unveil beguiling floral notes of candied violets and rose oil over a core of creme de cassis, blackberry pie, and plum preserves, giving way to notions of licorice, Indian spices, iron ore, and crushed rocks. Full-bodied, the palate is jam-packed with taut, muscular black fruit layers, intertwined with gorgeous floral and exotic spice accents, and framed by firm, finely grained tannins with seamless freshness, finishing long and mineral-laced. Tightly coiled with so much latent energy waiting to explode, this is a spectacular expression of the vintage and Napanook vineyard. Still tightly coiled, give it a good 6-7 years in the cellar before broaching, and allow it a few hours in a decanter if consumed before 2032.”
Our third single barrel of Whistle Pig and the first time we have our hands on their 6-year PiggyBack bottling. This one leads with a nose of freshly baked pumpernickel bread, butterscotch and toffee. On the palate, I get a lot of citrus & peach with a touch of lavender & black cherry. The finish here is strong & long with spicy dried fruits and caramel notes that linger. This one was distilled in house in Vermont, and as anyone can tell you with the farm releases, they always deliver the best of punches. This one comes in at 109.8 Proof.
The 2021 is bursting at the seams – a brooding, powerful Red Blend with raspberry, blackberry, vanilla and cranberry flavors on the attack that mesh with a hint of vanilla, and some well integrated sweet oak notes. It’s so silky smooth and inviting with pristine fruit – a mass appeal wine that is sure to be the talk of any table.
