Two weeks ago, I managed to snag a barrel of Redemption Bourbon for the Bourbon Buyers Club. Stay tuned for that offering, although barrels seems to be moving at a snails pace these days. Apparently there is a fairly large staffing shortage in the bluegrass state.
While tasting through their line-up down there, this was one that immediately jumped out to me that hit the flavor profile that I love. Super smooth, creamy & drank like a lower proof bourbon.
The high wheat content in the mash bill is very rare and makes the whiskey super smooth even at a fairly high 96 Proof (48% alc.). This baby was aged for four years, with a mashbill of 51% corn, 45% wheat and 4% malted barley. The blend is so damn good. It oozes with notes of freshly baked bread and a malty sweetness. That’s followed by notes of candied ginger, sage and lavender with aromas of oak and vanilla creeping through. On the palate, a silky blend that sneaks up on you with intense flavors of coffee, smoked meats, hazelnuts, baking spices and black pepper.

Everybody in the whiskey world knows Baker’s. They have one heck of a reputation. They only make one two things their 7 year and the 13-year, and their 7-year single barrel straight Bourbon just means it is aged for at least 7 years. I was just allocated six bottles, and ours is special – it happens to be aged 8 years and 1 month! Bottled at the signature 107 Proof, this is a flat-out delicious bottle of bourbon from the distillery that makes no two barrels alike. This one hits with notes of Toffee, caramel, peanuts and black pepper. The mouthfeel is full and distinct with dried fruits joining the party and a smooth, lengthy finish.

This is my sixth private barrel with Knob Creek overall (my fifth 10-year, 120-Proof Single Barrel) and I am consistently blown away by the ratio of quality to value here. It barely makes any sense. Nobody else comes close.
Rich and creamy notes of toasted oak, vanilla, caramel, and fresh baked sourdough immediately flood the senses as soon as you pop this one open. Bottled at 100-Proof, you get a little bit of heat on the front palate followed by rich oak, burnt sugar and freshly baked bread. As it starts to open, you get some sweeter, creamy vanilla notes that creep in as well as campfire s’mores and a dash of pepper. The finish is long, and very memorable and leaves you wanting more.
