It’s remarkable how simple local cuisine pairs so well with local wines. True – in most of Europe – the two have been co-developing and intermingling for around a thousand years. Winegrowers – perhaps unconsciously – preferenced wine varieties and winemaking techniques that made grandmother’s cooking even better.
The perfect marriage of wine and cuisine may be found in the tiny winegrowing region of Rias Baixas along the Spanish Galician coast. Basically isolated until the 90’s, miniscule family vineyards have been tended for generations with the sole purpose of pairing with the region’s inimitable seafood.
It’s here that – in the southernmost tip of the Rias Baixas – in tiny O Rosal – that we find Quinta de Couselo where they have been making wine since the estate was acquired by Cisterian Monks in 1163. O Rosal is perfectly situated – directly across Minho from Portugal in the Southeast – but still highly influenced by the temperate maritime influence of it’s Atlantic ocean marking its Western border.
The Albarino grown here is phenomenal, electric. Minerally, with a touch of saline courtesy of the cool Atlantic Ocean breeze and tropical notes of pineapple, mango and a tantalizing, lingering finish.

The Zenato family has built up quite the reputation for delivering exceptional value with their red and whites in Veneto. Their Pinot Grigio is a particularly great value, punching way above its weight class. Delicately scented and soft on the palate, it offers classic citrus and floral notes in a balanced elegant style. It’s smooth and refreshing with a long, pleasant finish. Great with food.
Etienne Daulny is the latest in a very long line of Daulnys to farm Sauvignon Blanc near the tiny hamlet of Verdigny in the appellation of Sancerre. He is currently in charge of farming over twenty small parcels including some incredibly well respected fifty-year-old vines. This is a classic Sancerre, aromatically dynamic, with intense fruit, distinct minerality and blazing acidity. It’s the white wine we drink most often at home. Beautiful structure and length to this with a youthful vibrancy that shines throughout.
Our all-time favorite Chardonnay is back just as the summer heat wave is starting to wind down! The Wagner Family’s Santa Lucia Highlands slam dunk. This is one that Nicholas Wines readers can’t get enough of – it always delivers. It leads with an inviting nose with fresh citrus and lemon notes. It’s always juicy, bright and well-balanced – it’s classic Caymus, rich and hedonistic with a wonderful creaminess. This is quintessential California Chardonnay.
Every year, this wine has proven to be a Nicholas Wines staple. The newly released 2022 Frenzy Marlborough Sauvignon Blanc is a fabulous value white wine, loaded with green apples, pears and white peaches plus a hint of spice. It’s juicy and fresh, the perfect cocktail hour white. It’s what is referred to as the perfect ‘pool wine’. It’s great paired with just about anything or just enjoyed on its own.
