Cellar Master, Émilien Boutillat is the youngest chef de cave to lead winemaking for a major Champagne House. The flagship release is the 2006 Champagne Rare, a 70/30 split of Chardonnay and Pinot Noir that’s a cellar selection from 8 different Grand Cru vineyards. Tight, backward, and straight-up structured, it offers brilliant notes of stone fruits, toasted brioche, white flowers, and obvious minerality. Needing plenty of air to show at its best, this beauty has a wonderful mid-palate, a racy mousse, and the balance and class to cruise for over two decades in cool cellars.

This champagne is so good, it’s often a staple on the wine lists of Michelin two and three star restaurants. It offers elegant aromatics, pristine fruit and the crisp, mineral finish that screams for food. We loved it so much, we asked Jacques Diebolt to bottle a special cuveé for the restaurant– and he happily agreed, but unfortunately it sold out like hot cakes. No matter, here is old faithful. Just as delicious and memorable as I remember it.
The 2022 Juliana Layla Pinot Noir: named after our now 13-year old daughter, her latest in a line of worthy Pinot Noirs. This is a delicious and super fresh cuvee that leads with cherry cola notes, blackberry juice, and violet notes with a hint of baking spice. It’s a pure-fruited, high-toned Pinot Noir with a great mid-palate, silky tannins, and a lot of focus. This is the very last of our two pallets. They can’t make anymore!

The oft 100-point winemaker, Jayson Woodbridge had this to say when tasting his 2021 ‘Stargazing’ Sonoma Pinot: “The wine is vibrant and complex with subtle dark fruits and berries, grandmother’s cherry pie, minerals, and a slight touch of rain-soaked earth, intertwined with a balance and very pleasing easy-going luxury. Should have been priced higher but what the hell.” I have no doubt this clerical error will be addressed in the vintages moving forward. But for now, this is a cult Pinot for under $100/bottle.
