94 Points, James Suckling
A pure and fruity style not without complexity, showing fresh roses, violets, strawberries and berries. Medium-bodied. It’s vinous on the palate, almost like a red wine. Polished, crisp and long with fresh dough and toasted bread. Very silky bubbles.

94 Points, James Suckling
Ayala is Bollinger’s sister property though stylistically they a very different. The Brut Rosé Majeur is a blend of Chardonnay (51%), Pinot Noir (40%) and Pinot Meunier (9%). The very high proportion of Chard and the unique process help create a Champagne with that’s light and refined yet also fairly elegant and layered. The access to quality grapes is second to none and the latest disgorgement shows that this Cuvee is only getting better. 94 Points from James Suckling who called out the “Very silky bubbles” as well as labeled this one “Polished, crisp and long.” This one was made in a fruity yet dry style with a lot of pure cherry, strawberry and orange peel flavors that burst through. Not to be missed!

MORE INFO
When it comes to Champagne, Ayala is that understated house you should know about. It was founded way back in 1860, and its founder, Edmond de Ayala, was a real renegade. He was a pioneer of the “dry” style, a revolutionary idea at a time when most Champagne was super sweet. This focus on low dosage—meaning less sugar is added to the wine—is still their signature. It’s all about letting the purity of the grapes and the complexity of the terroir shine through. Think of it as a clean, crisp, and elegant style that makes it perfect for any occasion.
Ayala’s wines are primarily driven by Chardonnay, which gives them a distinct freshness and precision. Their flagship Brut Majeur is a perfect example, blending Chardonnay with Pinot Noir and Pinot Meunier to create a balanced, vibrant wine. In 2005, the house was bought by the prestigious Bollinger family, who invested heavily in modernizing the facilities while respecting its rich history. This move has cemented Ayala’s place as a modern classic—a “sleeping beauty” that’s fully awake and producing some seriously sharp and sophisticated bubbles.
