As is often the case, it starts with the grapes and the climate they’re grown in. Heavy rains during a harvest can produce grapes with lower sugar content. That said, the biggest factor is harvest timing. A winemaker can choose to pick grapes earlier before the brix (sugar content) increases with further ripening. Later in the process, winemakers can also choose to keep fermentation going for a longer period, causing more of the grape’s natural sugars to convert into alcohol.
