Since the day we opened the doors of Restaurant Nicholas, Diebolt-Vallois has been our house champagne and the wine that has been poured for any celebration. Melissa and I first enjoyed this wine in Paris at many of the Michelin two and three star restaurants that buy most of the wine Diebolt produces. We loved the elegant aromatics, its pristine fruit and the crisp, mineral finish that screams for food.
We loved it so much, we asked Jacques Diebolt to bottle a special cuveé for the restaurant, one that would always display the characteristics that we fell in love with on that first trip to France. He happily agreed and continues to do so to this day. Other than Melissa and I, there are very few things that remain constant at Restaurant Nicholas. I’m very happy Diebolt-Vallois is one of them.
So, regardless of your celebration, be it New Year’s Eve, a special anniversary or milestone birthday, it doesn’t matter, I can’t think of a better wine to make it truly special.

The 2016 vintage in Napa was nearly perfect for winemaker Kian Tavakoli (Opus One, Clos du Val). With ideal weather all throughout harvest, he crafted the Faustini Money Road Chardonnay off the famous vineyard located in the coveted Oakville AVA. The picturesque vineyard off Oakville Crossroad is platinum rated, known for its ideal combination of soil & climate and the big A list names that routinely source fruit. Kian’s Money Road Chard is still youthful despite having a few years of age, probably as a result of its 18 months of slumber in 1/4 new Oak.

This one has always been my go-to for entertaining – I just hand everyone a glass upon arrival and people are always thrilled. The new batch of 2020 Barmes Cremant has just landed – and it’s so dang good. So much freshness and energy, with a beautiful nose of green apple and Anjou pear with tinges of honey, white nuts and white flowers. The fruit is near perfect, richly concentrated with a creamy texture. The finish is endless, with the tiniest of bubbles, with a zippy acidity that makes it perfect with seafood.
It’s an electric white Burgundy, with a limestone-laced aromatic profile of green apple, pear and hazelnut. Refined and high-toned, the pure, delicious fruit that is a hallmark of this terrific vintage, finishes long and fresh, with a mile-long mineral streak.

This is a Nicholas Faithful favorite. Even though it’s technically a non-vintage it was last disgorged in the 2020 vintage. La Cravantine, is a sparkling rosé of 100% Cabernet Franc, bone-dry, super fresh and with bubbles so tiny and fine, it puts most “real” Champagne to shame. Appealing strawberry and mineral scents are encased in a firm structure with a dry and spicy quality in the palate. This wine is incredibly versatile – perfect with just about any fish, fried food, or do like I do and enjoy it on it’s own.
