Our “story” with Whistle Pig goes way back. Their master distiller David Pickerel was a friend to us & a loyal supporter of Restaurant Nicholas. Turns out he liked good food.😜 To say David was a big deal in Kentucky would be the understatement of the year. How else do you think all my connections in Kentucky started?
The Boss Hog himself always made sure we had the best barrels for the restaurant. He & I even once blended a few barrels together. I kinda think he just wanted to drink together. Sadly the whisky world lost a legend a few years ago & I lost a friend. I have a few more barrels of Whistle Pig that he & I picked still up at the farm in Vermont & today I am releasing our 3rd barrel of 10 year Whistle Pig.

Once again dialing up fruit from 1000-1500ft in elevation in the Dundee Hills, Chad’s 2021 is juicy, laser focused and roaring out of the gates. Chad tells me that similar wines (very similar wines) off this vineyard are raising their prices up to $55/bottle from $45 this year due to 2020’s lost year. But where most people are raising prices to recoup last year’s losses, the CHAD Pinot Noir price is somehow lower. A true gift from our favorite winemaker.

Lively acids run through a core of blue/purplish fruit, lavender, cloves and menthol. The 2021 is deep and full of flavor yet also light on its feet. Bordeaux expert Neil Martin at Vinous looked in-depth at the 2018 vintage and offered that it was “a wellspring of wines of exceptional quality and unbeatable prices at decent quantities.” He went on to name some of the Cru Bourgeois from the entire vintage and at the top of his list was the 2018 Chateau Prieure de Beyzac Haut-Medoc. With incredibly gravelly, clay limestone soil, the tiny, swanky producer is able to make some staggering Cabernet Sauvignon and Merlot. Clearly the wine made an enormous impression with Martin, who lobbed a 92-point score on a wine he deemed, “absolutely superb.”

Xavier Vignon’s brand spanking new CDR 100% is a thing of beauty. It’s already got a blessing from Robert Parker’s Wine Advocate who described this wine as, “Full-bodied, concentrated and supple”. This is a gorgeous and intricate blend that features all of the Southern Rhone appellations. This year, the blend was 40% Grenache, 25% Mourvedre, 15% Syrah, 7% Cinsault, 7% Marselan, 6% Terret Noir. Nobody can do it like the mad scientist, Xavier Vignon.
