Takumi Daiginjo (Kyoto) – 2 bottles
The Takumi Daiginjo comes from the storied Kyoto region, showcasing purity, elegance, and vibrancy. The rice is polished fifty percent – meaning half the grain is removed – using Yamadanishiki, the most celebrated strain. To put it in perspective, Yamadanishiki is what Pinot Noir is to Burgundy. Much like Burgundy, it thrives on the slopes of Hyogo, shielded by mountains, making it the most valuable rice for sake. Water from the Fushimi River shapes this sake with ideal mineral content, resulting in a perfumed masterpiece celebrated throughout the world.
Katafune Ginjo Genshu (Niigata) – 2 bottles
From the highly awarded Takeda Shuzo Domaine, this comes from Takeda-san, a seventh-generation brewer in Niigata who’s received the highest honor from the IWC (International Wine Competition) – a blind tasting led by the world’s most renowned sake authorities. He’s won the top trophy three times and earned medals from TexSom in Dallas. His sakes are poured at Three-Star Michelin recipient The French Laundry in Yountville and Two-Star Michelin Enclos in Sonoma.
