We always have the Blancs de Blancs around, but you know I had to bring in something extra special from my friend Jacques Diebolt in Champagne. This is their Champagne Rose, a gorgeous Cremant with tons of lively aromas and flavors. It’s a 63% Pinot Noir, 27% Chardonnay, 10% Pinot Meunier blend. It’s a gorgeous blended rose that was fermented in thermostatically controlled vats, giving this so much expression and depth.
