Since the day we opened the doors of Restaurant Nicholas, Diebolt-Vallois has been our house champagne and the wine that has been poured for any celebration. Melissa and I first enjoyed this wine in Paris at many of the Michelin two and three star restaurants that buy most of the wine Diebolt produces. We loved the elegant aromatics, its pristine fruit and the crisp, mineral finish that screams for food.
We loved it so much, we asked Jacques Diebolt to bottle a special cuveé for the restaurant, one that would always display the characteristics that we fell in love with on that first trip to France. He happily agreed and continues to do so to this day. Other than Melissa and I, there are very few things that remain constant at Restaurant Nicholas. I’m very happy Diebolt-Vallois is one of them.
So, regardless of your celebration, be it New Year’s Eve, a special anniversary or milestone birthday, it doesn’t matter, I can’t think of a better wine to make it truly special.
The house champagne at Restaurant Nicholas, its pristine fruit and crisp, mineral finish screams for food.
Perfect for creamy dishes that include mushrooms or chicken, also an excellent match for shellfish, seafood and dried meats.

This is an exceptional premier cru offering from one of the most famous, most collected Burgundy producers. Clos des Porrets is a monopole, purchased by the Gouges family in 1933. Grégory claims it produces wine with the best potential of long aging within his range of wines. It has old vines rooted in pink limestone and rich clay, producing dynamite Nuits Saint Georges. Aromatically complex, with violets, black cherries and a touch of Burgundian earth. The fruit is pure, layers of dark cherries and plum that unfold in the glass with air. The tension is what you’d expect from one of the greats of Burgundy, wound-up and high-toned, the finish is mineral laded and goes on for minutes. This is truly extraordinary red Burgundy, an epic wine of power with finesse and just amazing potential.

Drawn from some the finest parcels on the storied hill of Montosoli, James Suckling says of the tiny Cerbaia estate’s newest release: “Elena Pellegrini’s 2015 Brunello is fragrant, redolent of purple flowers, sage and wild berries. The wine is dark and powerfully concentrated yet finishes fresh and kind stony, making it both fantastic at the table now and a great candidate for long aging”
The Mascot is a blend of Harlan, Bond and Promontory barrels, Cabernet Sauvignon from some of the most spectacular vineyards in the Napa Valley. It’s a bit steep, a Saturday nighter for sure. But when you consider Harlan Estate goes for about $1000 a bottle and Bond and Promontory come in around $500, the Mascot almost looks like a Tuesday nighter. Almost..

This one is a beauty. A great mix of baked apple, mango and papaya with honeysuckle and vanilla. For a top-notch First Growth Sauternes with 95 points – perfectly cellared and stored for 15 years – price tag seems almost nonsensical. $33/375ml or $29.70/bottle when added to case orders. Who’s ready to drink their desert this Thanksgiving?
