Growing up among the vineyards of Corbières with a great-grandfather and grandfather who were owner-harvesters, Thomas learned every stage of wine production from bud to bottle. He carefully chose Domaine Saint Eutrope for its distinctive terroir and assertive identity, then applied meticulous precision to every detail.

The approach here is all about quality: night harvesting with double sorting, low yields of just 35 hectoliters per hectare for maximum concentration, separate vinification to reveal each grape’s unique character, and long skin-contact maceration for that remarkable deep color and intensity.
