With 399 acres of vineyards situated in the best Grands Crus and Premiers Crus villages, Bollinger relies on its own estate for nearly two-thirds of its grape requirements, including the Pinot Noir that gives its Champagne its distinctive roundness and elegance. Bollinger is one of a select few houses that can control the quality of its grape supply so carefully.
Bollinger is renowned for its stringent quality standards. It adheres to traditional methods, including individual vinification of each marc and cru, barrel fermentation (it is the last Champagne house to employ a full-time cooper) and extra-aging on the lees prior to disgorgement.
The Special Cuvée is one of the estate’s calling cards and their latest release is outstanding. At least five expert reviewers gave the Champagne a 92-point score or higher, a great feat for a sparkling wine. It’s an elegant blend with very fine bubbles. On the nose, it has a beautiful aromatic complexity, ripe fruit, and spicy aromas, with hints of roasted apples, yeasty bread, and peaches. On the palate, there is a subtle combination of structure, length, and vivacity.

This one has always been my go-to for entertaining – I just hand everyone a glass upon arrival and people are always thrilled. The new batch of 2020 Barmes Cremant has just landed – and it’s so dang good. So much freshness and energy, with a beautiful nose of green apple and Anjou pear with tinges of honey, white nuts and white flowers. The fruit is near perfect, richly concentrated with a creamy texture. The finish is endless, with the tiniest of bubbles, with a zippy acidity that makes it perfect with seafood.
