Xavier is a master tinkerer, using his chemistry background to consistently experiment with everything from rootestock to mineral water to the plant’s salt intake during harvest. And as consulting oenologist to the stars of the region, he knows every single vineyard like the back of his hand.
I’ve compared winemaker Xavier Vignon to a magician before in the past, and I’ll do so again. He continues to come up with new and exciting wines that are unlike anything he’s done before. His latest trick, is a Rose cut off clay and gravelly soils located near Chateauneuf du Pape, towards Lirac. It’s got a great pale salmon color and a bouquet of flowers, raspberries, strawberries with a hint of spice. A perfect compliment to summer cuisine with a vibrancy and length to it that people will love.
