The Sylvain Bailly Sancerre Terroirs 2019 is vibrant and incredibly fresh, with aromas and flavors of green apple and quince with a stony finish that speaks to the special limestone that graces the hillsides of Bué. It is the quintessential house-white, just about perfect with anything you can dream up in your kitchen. In mine, our favorite is lobster rolls.

For producers like Sonia Bailly and her tiny family domaine the heart of Sancerre, they were really hoping for restaurants like our friends at Keith McNally’s Balthazar (who supply the outrageous mini-pastries we serve at bunch at Barrel and Roost) would reopen sometime soon as nearly the entirety of her US allocation was reserved as the house Sancerre of one of the busiest restaurants in the world.
There were very few things better in life than brunch at the Balthazar, the perfect omelette, a celebrity or two at the bar and a glass of Sonia’s electric Sancerre. I’m holding out that that scenario will play out before the end of 2020 but in the meantime, we’re going to help out.
