Founded in 1840, Simonnet-Febvre is amongst the oldest producers in Chablis and has become a benchmark for the region. Under uber-talented winemaker Jean-Philippe Archambaud, they’ve built an elite reputation with holdings that include a crown jewel plot in Grand Cru Les Preuses.
They have built a reputation on making pure and focused wines that express their terroir with an elegant mineral backbone, and they’re the only winery in Chablis to maintain the century-old tradition of producing Crémant de Bourgogne and they’re also one of the few who have the gusto to try their hand at this wine: the Saint-Bris Sauvignon from the only area of Burgundy where planting Sauvignon is allowed.
