Redbreast has a rich tradition in Ireland of over 100 years. The single pot still Irish whiskey brand made by Irish Distillers has always showed a more refined, premium style of Irish Whiskey. Currently, they have six different bottlings: the 12 Year Old, 12 Cask Strength, 15 Year Old, 21 Year Old, Lustau Edition (matured for its final year in Bodegas Lustau sherry casks) and as of the pandemic, a 27 Year Old Edition as well. The grand daddy of them all.
I packaged together two great 12-year editions that are very different in style but both so darn enjoyable on their own. These should keep everyone happy well beyond St. Patty’s Day!

This particular beauty is not only Barrel Proof but also sees extended aging in 18-year old ex-Bourbon barrels which I think adds some roundness and weight to the mid-palate and gives you a smoother finished product. Another advantage that Old Hickory has is they have Pam Soule, Seagrams master blender in charge, and she has helped their quality reach heights never seen before from this historic distillery.
I once again found myself with one of the more and limited bottlings from the good people at Michter’s It comes in a round 111 Proof and is a monster from one of the best distilleries out there. This bottling is usually between 107 and 112 Proof but isn’t made every year (only in the good years). It’s oozing with seductive aromas of Cinnamon, rye spice, chocolate and freshly baked gingerbread. Cinnamon, dark chocolate, a hint of Cayenne pepper mixed with charred sugar and oak explode out of the bottle and greet you head on. I wish I had more than six of these beauties to pass out. Such is life.
Rich and creamy notes of toasted oak, vanilla, caramel, and fresh baked sourdough immediately flood the senses as soon as you pop this one open. Bottled at 100-Proof, you get a little bit of heat on the front palate followed by rich oak, burnt sugar and freshly baked bread. As it starts to open, you get some sweeter, creamy vanilla notes that creep in as well as campfire s’mores and a dash of pepper. The finish is long, and very memorable and leaves you wanting more.

A new High West release is always met with a ton of anticipation, but if you’re a fan of the Cabernet Cask finishes on Bourbons and Tequilas like I am, then this one is 100% right up your alley. The aromas absolutely drip out of the bottle—a mix of cherries, oranges, and chocolate dance on the tongue, followed by some nuttiness intertwined with a hint of the used Cabernet barrel. It’s got some spice to it, a little hickory smoke, and some dark cocoa notes at the end that keep you coming back over and over again.
