La Chablisienne Saint Bris 2021

It sounds absolutely bonkers to say – but I found the perfect, mineral driven Sauvignon Blanc that can hang with anything from the Loire, except I got this in one of the more unlikely places … in the heart of Burgundy’s Chablis.

The St. Bris appellation is tiny and the wines coveted – not least because of their otherworldly ability to pair with oysters or fresh goat cheese. It’s the only area in Burgundy allowed to grow Sauvignon Blanc.

Gourmands from as far as three or four generations ago routinely served St. Bris as an aperitif as it was well known to enliven and stimulate the taste buds.

Today’s example does that in spades. It’s zesty, vibrant, and medium-bodied giving it easy going seriousness about it that betrays its modest price point. Lemon, citrus, gooseberry and, of course, intense Chablisienne minerality pervade.
