It hasn’t been since I convinced Dan Burke, the CBO (chief barrel officer) at Jefferson’s to let us have the only wheated Bourbon that we have done something aged in the ocean.
After years without it, I’ve finally been offered our first non-single-barrel allocation. What better way to celebrate America’s birthday than with a distillery named after Thomas Jefferson and their super-innovative ocean-aged whiskey release?
Jefferson’s Ocean Aged Bourbon was once just a limited release, but as demand continued to rise, it eventually became a regular bottling. The concept is brilliant: they load barrels onto ships that travel around the world, letting the constant motion and temperature changes from ocean voyages create unique flavors you simply can’t get any other way. The rocking motion forces the bourbon deeper into the wood, while the sea air and temperature variations add complexity that traditional aging can’t achieve.
