Mallory and Benjamin Talmard are not modern, tinkering winemakers. They have a singular focus; growing Chardonnay grapes and the producing the purest form of the variety that both reflects the steep hillsides of the Maconnais and their incredibly hard work. Their focus is old-school and for me, this is the kind of grower I seek out when it comes to white Burgundy.
Growers of Chardonnay on the limestone soils of southern Burgundy since the 17th century, the Talmards currently work 30 hectares of Chardonnay vines spanning five villages. The vines are old, averaging 40 years. The Talmards use only stainless steel in their winemaking, they don’t want the influence of oak in any of their wines, just the sunny, opulent fruit and the crisp, saline minerality unique to Burgundy.
Very few producers master that special White Burgundy vibrancy with more care than Mallory and Benjamin Talmard. Talmard Macon Uchizy is Chardonnay in its purest form, juicy, vibrant and so food-friendly.

Top notch Chenin grown on a biodynamically farmed parcel of gravel over limestone and flint. Vinified dry in steel with no wood aging. From the glass, complex Aromas of Anjou pear, citron, white flowers and cream soar with just a touch of jasmine and honey. On the palate, the wine is rich yet still bone dry with a vibrant core of peach and pear fruits and a fresh crackling of saline and minerality. The zipped up acidity makes this wine both fantastic at the table and a great candidate for aging.
It’s no wonder this is a hot little ticket amongst some of NYC’s best restaurants; this is a killer wine at a great price. The 2022 Petit Chablis has an attractive nose of citrus rind, white flowers, and wet stone. In the palate, the wine is racy and mineral with just a touch of salinity. The hallmark of the great 2022s will be tension and length and Sébastien’s little wine has both in spades. The acidic/mineral cut will make this fantastic at the table and a great candidate for short term aging.
Every year, Pierre Sparr’s Alsacian Riesling is one of the top scoring wines in the under $20 category. There’s a consistency there and consumers know they can count on a Riesling that is aromatic, fruity, elegant, clean and vibrant. Pierre Sparr wines are extremely food-friendly especially in the widely praised 2021 vintage where quality rose to an all-time high. It’s a bone-dry beauty with layers of citrus fruits, framed by wet stone and mineral character that adds dimension.
What would a Chardonnay collection be without something special from the master of Chardonnay, Steve Kistler? I was just allotted a few cases of the outrageously good Les Noisetiers from California’s exceptional 2021 vintage. It comes bristling with energy, nuance, juicy fruit and a mouthwatering mineral backbone. As always with these wines, it is expertly made with lemon, honeysuckle and stone fruit aromatics leading to a full bodied, juicy core, loaded with flavors of peach, apricots, pineapple and pear.
