Year in and year out, one of my favorite Sauvignon Blancs in the world is Vincent Ricard’s inimitable Trois Chenes. I love a maverick so if you remember the story, I apologize but it’s too good not to hit the highlights for our newer readers.
Vincent’s father – like all the grape farmers of the small village of Thésée-La-Romaine, did as they always had done – tried to produce as much fruit as humanly possible in the vineyard to haul down to the village cooperative and sell by the ton – quality by damned.
Young Vincent – protegé to the Silex-style of Dagueneau – who had just returned to the family’s estate had another plan all together. He would work all summer long, tending the vines by hand, aggressively trimming the vines, leaving profits to spoil on the ground. Each day the old men of the village would pull up chairs and watch him work – amused by all his hard work.
But the fun and games were all over once the wine bottled under the family name and finally released. It was sublime, completely out of this world – easily competing with the wines of Sancerre four to five times the price. So the old men sprang to action and they sued Vincent for making wine ‘too good’ or out of type for the region – knowing there was no way they could possibly compete.

Simply stunning. An incredible effort in arguably the greatest Sancerre vintage since 1947, Dominique’s single vineyard ‘Les Deserts’ is considered the Grand Cru vineyard of Bue. It’s a dead ringer for Premier Cru Chablis; it’s that complex. How when it’s Sauvignon Blanc? Well, the vines of Les Deserts are rooted in Kimmeridgian rock, the same soil you find in the best vineyards of Chablis. It’s full-bodied with a chalky minerality and a beautiful, vibrant intensity. This will forever change the way you view Sancerre. It really is that good.
This one is electric, great minerality, great lemon lime and saltiness. It even has a little ageability. I’d drink this over the next few years. This is one of the absolute best expressions from the region (a Cru vineyard designate in 2011) and so perfect with anything out of the sea but in particular the raw bar. Crisp and clean stone fruit with some pear, and a lot of personality. This is a great new discovery wine to check out.

“The wine’s prominent vineyard signature or “sense of place” is its core driving feature, and this character is both clearly defined and focused in the wine’s flavor and structure. It shows real authority and great authenticity. Aromatically layered and complex with fresh raspberry and red cherry fruits, then rose petal and thyme, and an underlying mossy, woodsy edge. The wine’s fruit is initially crunchy and crisp before turning darker to sleek and succulent cassis and black cherry. As the wine expands, it grows in volume and mineral focus then finishes long, persistent, and penetrating, with great clarity of flavor and spicy intensity.”
It’s no wonder this is a hot little ticket amongst some of NYC’s best restaurants; this is a killer wine at a great price. The 2022 Petit Chablis has an attractive nose of citrus rind, white flowers, and wet stone. In the palate, the wine is racy and mineral with just a touch of salinity. The hallmark of the great 2022s will be tension and length and Sébastien’s little wine has both in spades. The acidic/mineral cut will make this fantastic at the table and a great candidate for short term aging.
