It took almost a year of prodding but I finally got a warm introduction to the folks of this historic distillery. I was not only able to secure a barrel for the restaurant, but was even able to choose it from a lineup of a dozen! The barrel that I selected was head & shoulders better than the others I tasted, aged 12 years at one constant temperature.
If you haven’t had a bottle of Pinot Noir from the Willamette Valley, it’s time to change that immediately. There’s probably no better place to start than right here. The Chad 2018 shows off the best of Oregon in 2018; fine aromatics, pretty fruit and a long, mineral backbone that makes it great at the table with anything.
This champagne is so good, it’s often a staple on the wine lists of Michelin two and three star restaurants. It offers elegant aromatics, pristine fruit and the crisp, mineral finish that screams for food. We loved it so much, we asked Jacques Diebolt to bottle a special cuveé for the restaurant– and he happily agreed!

The Peter Michael “La Carriere” 2017 is a tightly wound, charged up wine that takes time to unravel in the glass. It is loaded with aromas and flavors of citrus rind, white flowers, green apple and pear with a distinctive sense of minerality that flows throughout the wine.
