Henri Champliau is a family-owned sparkling wine producer in Mercurey, located in the heart of the Côte Chalonnaise region of Burgundy. Though they’re a bit of a new player on the scene, their méthode traditionnelle Sparkling wine has been turning some heads and challenging generations of tradition.
This is an absolute beauty coming out of Burgundy and a Cremant that catches you off guard. A beautiful pale pink blend that absolutely sings in a glass. It has a precise and intense mouth, dominated by the Pinot Noir that brings elegance and power and aided by the structure and freshness of the Chardonnay. The kicker is the Gamay that defies typical Burgundian methods and brings in another layer balance but with a little extra flair. It’s delicious.

The secret to Philippe’s tightly wound, complex Pinot Noir is a combo of ancient vines, natural farming techniques, and low yields. The wines are built to age, with incredible tension and length. And the secret to me securing his other-wordly 2017 old-vine Gevry-Chambertin can be chalked up to a great relationship and over a decade supporting superior Burgundian winemaking. The wine is scary good. The nose is wild, filled with spiced dark raspberries, red flowers, and baking spices. The palate is elegant and racy, with a dynamic tension that runs right through its minute-long finish. This is a high-toned, wound-up Pinot, that is starting to hit its prime and is really turning out to be a ‘must-have’ for true Burgundy lovers.
Recently Wolffer Estate has expanded their famous Rose line to now include a Cotes de Provence Rose. For my money, it’s hands down a better bottling – an energetic and super fresh pink wine created from the French staple Rose grapes of Grenache, Cinsault and Syrah as opposed to the Long Island version that has a whole lot of varietals mixed in. It’s bright and balanced and the perfect treat for the pool or beach as the weather warms.
The wine is so dang good, nearly every single one of my staff tried to take the sample bottle home when it was brought into the restaurant. It’s just so juicy, lively and pure. Even without the score, this is a total layup. This is a gorgeous French Rosé at an absurd price. One of the absolute best quality-to-price ratio offers of the year, every single year… no questions asked.

The Bisol “Jeio” Prosecco NV is a delicious sparkler that comes from the Veneto region of northeast Italy. A brilliant straw yellow color, the first sip is an intense and fresh nose of citrus fruits and saline sensations. If you love fruit forward sparklers… this one is for you.
