19 May Chicken Cheesesteak Recipe
It was like an episode of Chopped, no plan, 20 minutes to the school bus arrives and all I wanted was to still be in bed. I had raw chicken cutlets, hoagie rolls and American Cheese. Wham! 7 minutes and 30 seconds later the kids got chicken cheesesteaks. Now it seems like twice a week the kids are waking me up and challenging me to a cook-off.
Here is the recipe:
- 3 oz finely chopped raw chicken breast (be careful if you are still sleepy)
- 3 slices American cheese
- 1 sub roll
- 1 Tbsp Water
- 1 Tsp Olive oil
- S & P to taste
- Saute Chicken in olive oil in a nonstick pan, Season as cooking
- Just before the chicken is completely cooked add water & cover with cheese.
(The steam will melt the cheese)
- Scoop into sub roll & wrap in aluminum foil.

Nichols Napa Valley Cabernet Sauvignon 2018
Britt Nichols, whose résumé includes stints at Jordan, Peter Michael and Melka, blows my mind each year. 2018 was no exception. Her 2018 Cabernet Sauvignon was sourced from the steep, rocky hillsides of St Helena just northwest of Lake Hennessey from dry-farmed, Napa-Green Certified vines that produce tiny, thick-skinned berries. This is the source of the wow-factor in Nichols Cabernet. The ’18 is flashy, with dark, powerful fruit yet balanced by fine tannins and great length, hallmarks of that long growing season.
