I’ve compared winemaker Xavier Vignon to a magician before in the past, and I’ll do so again. He continues to come up with new and exciting wines that are unlike anything he’s done before. His latest trick, is a Rose cut off clay and gravelly soils located near Chateauneuf du Pape, towards Lirac. It’s got a great pale salmon color and a bouquet of flowers, raspberries, strawberries with a hint of spice. A perfect compliment to summer cuisine with a vibrancy and length to it that people will love.

The wine is so dang good, nearly every single one of my staff tried to take the sample bottle home when it was brought into the restaurant. It’s just so juicy, lively and pure. Fresh off a huge feature in The Wall Street Journal in which they were crowned as the top Prosecco Rose in a lineup of 14, I suspect what was once our little secret will explode.
