It took almost a year of prodding but I finally got a warm introduction to the folks of this historic distillery. I was not only able to secure a barrel for the restaurant, but was even able to choose it from a lineup of a dozen! The barrel that I selected was head & shoulders better than the others I tasted, aged 12 years at a constant temperature.
This ‘Nicholas Reserve’ exclusive bottling is an exceptional single malt made exclusively from malted barley. Triple distilled one batch at a time in traditional, onion-shaped copper pot stills, the whiskey is then aged in bourbon oak casks for twelve years. The delicate distillation process, along with the moist and temperate climate, yields the distinctive flavor of this remarkable Irish single malt. It’s rich and smooth with baking spice aromas, a hint of fruitiness and a clean, medium finish a mile long!

This is one of the finest Whiskey’s in the world. The barrel that I selected was aged 12 years and was head & shoulders the best of the dozen that I tasted.

Back in the day, Widow Jane used to be a staple at Nicholas Wines. But as its popular has gone crazy, it’s been tougher and tougher to get my hands on any. This is a hyper small batch bourbon that was aged for a minimum of thirteen years, non-chill filtered and proofed with Widow Jane’s signature limestone mineral water from the Rosendale Mines in New York. It’s a doozy of a bottle at 93 Proof and has notes of vanilla, nutmeg, graham cracker and sweet tobacco.

“The 2021 Malbec Reserva, from Vistalba, Lujan de Cuyo, was 60% aged in barrels for 12 months. Purple in color. The nose presents notes of fresh plum and violets, white pepper, strawberry, hints of spice and aromas from the aging process. It’s initially indulgent in the mouth, with good fat, and volume and a velvety texture. The flavors are bold and full-bodied. This 2021 overdelivers at the price.” -Vinous

We are one of the very few folks who have Wine Spectator’s #3 Wine of the Year. This is definitely not one to miss. This is a Nicholas Faithful favorite. Even though it’s technically a non-vintage it was last disgorged in the 2020 vintage. La Cravantine, is a sparkling rosé of 100% Cabernet Franc, bone-dry, super fresh and with bubbles so tiny and fine, it puts most “real” Champagne to shame. Appealing strawberry and mineral scents are encased in a firm structure with a dry and spicy quality in the palate. This wine is incredibly versatile – perfect with just about any fish, fried food, or do like I do and enjoy it on it’s own.
