Since the day we opened the doors of Restaurant Nicholas, Diebolt-Vallois has been our house champagne and the wine that has been poured for any celebration. Melissa and I first enjoyed this wine in Paris at many of the Michelin two and three star restaurants that buy most of the wine Diebolt produces. We loved the elegant aromatics, its pristine fruit and the crisp, mineral finish that screams for food.
We loved it so much, we asked Jacques Diebolt to bottle a special cuveé for the restaurant, one that would always display the characteristics that we fell in love with on that first trip to France. He happily agreed and continues to do so to this day. Unfortunately, that bottling already sold out in a hurry, so while we wait for the next batch, here’s the original.
So, regardless of your celebration, be it New Year’s Eve, a special anniversary or milestone birthday, it doesn’t matter, I can’t think of a better wine to make it truly special.

Perfect for creamy dishes that include mushrooms or chicken, also an excellent match for shellfish, seafood and dried meats.

“The moment you move the glass close to your nose the extraordinary perfume of this great Cornas is overwhelming. Deep, meaty and smoky, yet brimming with blue fruits and violets, how can you resist? What grace and elegance this has on the pristine and light-footed palate. Really concentrated, but only medium-bodied, this is a masterpiece of filigree at the breathtakingly fresh and precise finish. Drink or hold.”

“Luxurious and rich, yet pinpoint in focus, with expressive apple and strawberry flavors highlighted by brioche, ginger and spices. Drink now.” -Wine Spectator
Winemaker Patrick Brunet’s tiny Domaine Robert estate consists of 50-60 year old vines, deeply rooted in the granitic soils of Fleurie. What I love about him is that every vintage brings something new but it consistently stays excellent. For his 2022 cuvee, Patrick produced a concentrated, structured Beaujolais that’s roaring out of the gates but with the bones to improve in the bottle over the next decade. This is always a fantastic bottle to have around.

“The 2000 Dom Perignon is a gorgeous, seductive wine that floats on the palate with remarkable grace. Toasty aromas meld into freshly cut flowers, apricots and pears, with sweet notes of mint and licorice that linger on the long finish. This perfumed, inviting Dom Perignon is elegance personified, and in this vintage the wine fully merits its lofty reputation.”
