My time at Jean-Georges opened my eyes to world of fine dining. The economy was flying and there was no place in the city where the truly epic, standard-bearing wines of the world flew off the list with more regularity. Harlan, DRC, Chateau Latour and Dom Perignon might as well have been Tuesday nighters at Jean Georges in that era. For white Burgundy, and specifically, Puligny Montrachet, nothing sold quite like Etienne Sauzet.
25 years later, not much has changed in terms of the demand on Etienne Sauzet. The Big Man has it exactly right, Sauzet creates benchmark wines not only for Puligny Montrachet but for all of Burgundy. Current winemaker, Emilie Boillot, Etienne’s great grand-daughter, has amazingly raised the bar, farming biodynamically, reducing yields, and employing a more rigorous selection of grapes. The resulting wines are nothing short of fantastic and the new releases from 2017 are flat out electric.
I love the 2017 village Puligny, a rich but racy white Burg with a mineral length that not only shows it is one of the best white wines in the world for fine cuisine but also has the legs to gracefully age for a least a decade.
Because of the rarity of the wine and incredibly high demand, I only receive a limited amount of bottles each year for the restaurant. I’m happy to peel off a few for all of you. Trust me, you don’t want to miss out on this one.

One wine that will never be rated, nor see a top 100 list is the one we have today. That’s not a bad thing – it’s just their ‘secret Chardonnay.’ It’s never released to the general public or retail, only a few hundred cases are made each year to service the restaurant industry. But luckily for us, I’ve got a restaurant. And while the Sonoma Coast bottling is definitely the ‘calling card’ that you’re used to seeing from this great estate, I’m telling you the Russian River Valley Chardonnay blows that one out of the water.
Year in, year out Château Turcaud produces one of the best white wine values in the world. It’s long been found on Michelin-starred wine lists in Paris and we’ve had it at the restaurant since Day 1. If you’ve ever tried this stunning, classic Bordeaux of Sauvignon Blanc, Semillon, Sauvignon Gris and Muscadelle, then you know why. The new 2022 vintage has arrived and it’s beaming with energy and pure stone fruits. This is a beauty as always.
The newly released Riesling Feinherb 2021 is a lively, juicy wine with an elegant bouquet of minerals, wet stone and ripe fruit. On the palate, the wine’s slight off-dry component is beautifully balanced by the steely acidity typical of the Mosel. Because this is freshly released, the fruit is vibrant and succulent and it comes in somewhere between off-dry and semi-sweet. It’s a great example of Riesling, especially at the price.
It’s hard to beat a great value white wine and this one is a at least a cut above the rest. One prominant industry insider called the 2022 edition, “the best white wine by any within $20/cs of this price.” It’s super crisp with a great mineral streak, and was carefully picked by hand when the temperature is coolest and is kept cool all the way into the press. From there, the effect of the mineral soil takes over, providing great finesse and freshness in every bottle. This white blend has great backbone and a lot of juicy fruit coming through behind aromas of flowers and stone fruits. At this price, it’s a no brainer.
