Based in Kirby, Wyoming, Wyoming Whiskey has had a simple goal: to create America’s next great bourbon. The company and product is a collaboration between its partners and 97,818 square miles of Wyoming. The Mead family first came to Wyoming as ranchers in 1890 and the state defines them, and their whiskey. They use the finest corn, wheat, barley, and water from the Big Horn Basin and promote Wyoming’s natural and human resources. Every drop of this bourbon is 100% Wyoming.
Wyoming Whiskey is one of the only independent distilleries that make their own whiskey. I know it seems like there are a lot small distilleries but most are actually buying bourbon from a massive distillery, finishing it in barrel, then slapping their label on it. That’s not the case at WW & it’s a really good thing too because what they do is way better.
This Special Edition Bourbon is made from 100% locally sourced grains and is bottled at 90 proof. It is designed to be smooth, easy-drinking, and slightly lighter than Wyoming Whiskey’s Small Batch bourbon with a red berry note complementing its customary vanilla and caramel flavor profile. This is the very first 2024 installment of the limited production project from the Bourbon leaders, Booker’s and their iconic master distiller, Freddie Noe. They’re calling this batch ‘Springfield Batch’ as an homage to Booker Noe’s hometown in Kentucky where he was born and raised. This is a little bit of an older age statement than the last few in the series at 7 years, 7 months, and 8 days. It was bottled at 62% alc (124 Proof).
In the 2020 vintage in Gevrey-Chambertin, yields were super low and temperatures were hotter than most Burgundian winemakers are accustomed. Many picked too late when the sugars were high and the fruit really ripe, but that was not the play. Still, Ann remained as cool in those hot temps as she did so many years ago in Napa, concentrating more on acid levels than sugars and picking at just the right time. This wine is absolutely singing – it’s an age-worthy beauty that should be even better in 4-7 years.
This champagne is so good, it’s often a staple on the wine lists of Michelin two and three star restaurants. It offers elegant aromatics, pristine fruit and the crisp, mineral finish that screams for food. We loved it so much, we asked Jacques Diebolt to bottle a special cuveé for the restaurant– and he happily agreed, but unfortunately it sold out like hot cakes. No matter, here is old faithful. Just as delicious and memorable as I remember it.
Our third single barrel of Whistle Pig and the first time we have our hands on their 6-year PiggyBack bottling. This one leads with a nose of freshly baked pumpernickel bread, butterscotch and toffee. On the palate, I get a lot of citrus & peach with a touch of lavender & black cherry. The finish here is strong & long with spicy dried fruits and caramel notes that linger. This one was distilled in house in Vermont, and as anyone can tell you with the farm releases, they always deliver the best of punches. This one comes in at 109.8 Proof.
