The electric whites from Fèvre are almost always reserved for private clients and local restaurants, like the amazing Au Fil du Zinc in downtown Chablis, or even closer to home at NYC classics like Il Buco, Union Square Cafe, and The Grill on Park Ave. But when you’re sitting in someone’s home and you’ve traveled nearly a day to see them, it’s pretty hard to say no! So we did what we had to and leaned on the fact that we were right there in their laps, and it worked—we got the goods.
Nathalie and Julie are a dynamic team in the cellar. Their rapid-fire French set the tone for this exciting estate—thank god for our translator! The family combines the wealth of old vines in great positions with a technical prowess that few estates can boast. The jewel of the estate is Vaulorent, a lieux-dit of the most southern reach of Fourchaumes, sharing the same hillside and soil composition as the Grand Cru, Preuses. Their parcel was planted in the mid-1950s, yielding racy and fine Chablis, a bit salty and with fantastic length.
This one though is a Saturday Nighter – a special wine for sure. It comes from Fourchaume (one of the most noted Chablis 1ers crus) and vineyards situated on long slopes facing the sunrise, which allow for rapid soil warm up – a huge key to making deep, concentrated Chablis. Here the soils are predominantly brown clay and only slightly stony. Most of them are fairly deep and well-draining. It’s one of those most special white wine locations in all of Burgundy. This is a classic.

The newly released Riesling Feinherb 2021 is a lively, juicy wine with an elegant bouquet of minerals, wet stone and ripe fruit. On the palate, the wine’s slight off-dry component is beautifully balanced by the steely acidity typical of the Mosel. Because this is freshly released, the fruit is vibrant and succulent and it comes in somewhere between off-dry and semi-sweet. It’s a great example of Riesling, especially at the price.

If you haven’t had one of the wines of Ancient Peak’s rising star Amanda Wittsrom-Higgins, then you need to change that immediately. Her 2022 Santa Margarita Ranch Sauvignon Blanc is excellent – a racy and seamless mix of stone fruit and tropical flavors and aromas, that make it super approachable and easy to drink and also a must-have for the summer. Isolated from any other vineyards and right by the sea, this is a sea-kissed, juicy and even salty Sauvy B that will win over the crowd and disappear in a hurry.
Year in, year out Château Turcaud produces one of the best white wine values in the world. It’s long been found on Michelin-starred wine lists in Paris and we’ve had it at the restaurant since Day 1. If you’ve ever tried this stunning, classic Bordeaux of Sauvignon Blanc, Semillon, Sauvignon Gris and Muscadelle, then you know why. The new 2022 vintage has arrived and it’s beaming with energy and pure stone fruits. This is a beauty as always.
Just in time, we got back Vincent Ricard’s all-time great white wine bargain. This is a crisp, clean and flat out delicious Loire Valley Sauvignon Blanc. The protege to the Silex-style of Dagueneau – who over the last 15 years has produced flawless and beloved white wines that at last count were on the wine lists of over 36 Michelin-starred restaurants. This is a great house white and one that can surely hold its own with just about everything on the table.
