This comes from Saint-Bris, a tiny village that borders Chablis – with the same kimmeridgian soil that makes Chablis so distinctive and unique. But since they’re just (and I mean just) outside the official Chablis boundary, they’re able to grow a grape those in Chablis can’t: Sauvignon Blanc.
The result is a Sauvignon Blanc that is pure minerality – to a level that is usually reserved for far more expensive Sancerres from Chavignol. It’s a no-frills wine too (in a good way) fully certified biodynamic, hand-picked and fermented in stainless steel so that it accentuates the full aromatic and flavor profile that’s completely unique to Kimmeridgian soil.
I tasted this gem last week which hails from just outside of Burgundy and fell for it right away. The winery is located in a medieval prison so it’s super cold in the cellar and the fermentation takes much longer than neighboring wineries.
The results make it very worth the wait. An elegant Sauv Blanc with green apple, pear, and piercing minerality for the limestone. It’s got great weight, making it the perfect candidate to pair with food and nearly a must at the Thanksgiving table.

91 Points, Neil Martin – Vinous
The 2020 Saint-Bris Exogyra Virgula, which was taken from tank, has a light apple blossom bouquet with a lovely lemon thyme scent. The patate is fresh, vibrant and very saline, delivering good density and flavors of green apple mixed with pear toward the finish. Superb.

Stephan Steinmetz is a star in the Mosel wine region. His old vines are rooted in Kimmeridgian limestone, the exact same vein of rock that winds its way from Sancerre through Chablis and Champagne to its final out-cropping here in the Obermosel. His Elbling is glorious — both completely unlike anything I’ve ever had and also eerily familiar. The color is almost clear, some might call it silver. A stunning nose of green apples and lemon peel gives way to fresh pear and bright citrus fruits on the palate. It’s a stunningly focused wine with a healthy dose of minerality and acid zip, not unlike great Sancerre/Chablis and bone dry.
One of the best places to look for great Tuesday nighters are the sandy, limestone-laden hills of Asti. And within Asti, there is no white wine calling card that holds a candle to Moscato. Here it is king. Gianni Doglia naturally farms a tiny estate in the picturesque hamlet of Castagnole Lanze. His Moscato is the product of old vines, vinfied without oak to preserve its incredible fruit. This is serious, high-quality and hand-harvested Moscat, that oozes with sweet tropical fruits and a hint of minerality that stays on your tongue with each sip. This is also the perfect wine for anyone searching for a low alcohol option as well.
Just in time, we got back Vincent Ricard’s all-time great white wine bargain. This is a crisp, clean and flat out delicious Loire Valley Sauvignon Blanc. The protege to the Silex-style of Dagueneau – who over the last 15 years has produced flawless and beloved white wines that at last count were on the wine lists of over 36 Michelin-starred restaurants. This is a great house white and one that can surely hold its own with just about everything on the table.
We’re nearing the end of what was a flawlessly crafted, high energy coastal Chardonnay release from one of California’s hottest spots. It’s still every bit as bright and refreshing as you could want and it hits with clean, pristine green apple fruits, pears and citrus notes with a hint of that limestone-influenced minerality. It’s a fantastic wine for all seasons, the perfect pair with mixed seafood, summer tomatoes, corn and freshly caught fish.
