Since the day we opened the doors of Restaurant Nicholas, Diebolt-Vallois has been our house champagne and the wine that has been poured for any celebration. Melissa and I first enjoyed this wine in Paris at many of the Michelin two and three star restaurants that buy most of the wine Diebolt produces. We loved the elegant aromatics, its pristine fruit and the crisp, mineral finish that screams for food.
We loved it so much, we asked Jacques Diebolt to bottle a special cuveé for the restaurant, one that would always display the characteristics that we fell in love with on that first trip to France. He happily agreed and continues to do so to this day. Unfortunately, that bottling already sold out in a hurry, so while we wait for the next batch, here’s the original.
So, regardless of your celebration, be it New Year’s Eve, a special anniversary or milestone birthday, it doesn’t matter, I can’t think of a better wine to make it truly special.

Perfect for creamy dishes that include mushrooms or chicken, also an excellent match for shellfish, seafood and dried meats.
It’s an electric white Burgundy, with a limestone-laced aromatic profile of green apple, pear and hazelnut. Refined and high-toned, the pure, delicious fruit that is a hallmark of this terrific vintage, finishes long and fresh, with a mile-long mineral streak.
2022 was an absolutely perfect vintage in this respect and unfortunately, I think it will be one of the last, if not THE last. As winegrower Jean-Marc Brocard reported to Decanter: “When we taste the wines, we feel that the balance between acidity and ripeness is very good. It’s a classic style of Chablis. In the end, even after such a heat during summertime, we stay in a cool year reference.” He also alluded to the ageability of the vintage, saying “Let’s give them time, we must let nature do its work.”
96 Points, James Suckling
“The moment you move the glass close to your nose the extraordinary perfume of this great Cornas is overwhelming. Deep, meaty and smoky, yet brimming with blue fruits and violets, how can you resist? What grace and elegance this has on the pristine and light-footed palate. Really concentrated, but only medium-bodied, this is a masterpiece of filigree at the breathtakingly fresh and precise finish. Drink or hold.”
The newly released 2022 Domaine Laroche Chablis Saint Martin has some big shoes to fill as the last four vintages have earned 92-points or higher, but the early indications are that this is line with previous vintages if not even a little bit ahead at this stage. The problem is – there’s almost none to go around with much smaller yields. Still this is beautiful and crisp, with good focus, energy and depth. I get the signature green fruits on the nose, with some Asian pear, and a hint of jasmine blossom. There’s a beautiful mineral streak that highlights this one. It’s a fantastic White Burg for the price.
