There are few distilleries that garner as much attention as Buffalo Trace at the restaurant. It’s the number one requested bourbon at our bar by far.
Over the last few years, I’ve been trying to purchase our own barrel but getting a Nicholas Barrel Reserve at Buffalo Trace is only slightly easier than getting my own barrel of Pappy. The distillery is one of the oldest distilleries in Kentucky and is the place where Pappy Van Winkle, Blanton’s, George T. Stagg, E.H. Taylor, Elmer T. Lee & Weller are made (just to name a few). Private tours are almost non existent and landing a visit to select your own barrel happen about as often as a New York Giant victory.
Buffalo Trace lives up to the hype though. I am blown away that they can sell a bourbon that is 8 years old at this quality level for such a fair price. I tasted through 25 barrels that were specially set aside for me by Bo Beckman who is the only guy in the private barrel program.
This barrel had a deep a golden color with a complex nose of vanilla, mint and molasses. On the palate it is sweet with notes of brown sugar and fall spice that give way to oak, toffee, & dark fruit. The finish is long and smooth with serious depth.

This is a very rare single barrel Bourbon Whiskey to make its way to Jersey. Maple syrup, butterscotch, caramel & brown sugar with a palate of caramel apple, roasted almond, ripe banana and graham crackers. This one has a full mouthfeel with a nice creamy middle. The finish here lingers with just the right amount of burn. This was born on 2/3/2017 and bottled at 102 Proof. This is a great bottle of Whiskey.
Back in the day, Widow Jane used to be a staple at Nicholas Wines. But as its popular has gone crazy, it’s been tougher and tougher to get my hands on any. This is a hyper small batch bourbon that was aged for a minimum of thirteen years, non-chill filtered and proofed with Widow Jane’s signature limestone mineral water from the Rosendale Mines in New York. It’s a doozy of a bottle at 93 Proof and has notes of vanilla, nutmeg, graham cracker and sweet tobacco.
This is definitely one of the most unique private barrels of bourbon you’re gonna find anywhere and it comes from our friends at in Kirby at Wyoming Whiskey. It’s been two years since we’ve had this baby! They make their own whiskey in-house instead of getting it shipped to them and finishing it. In doing so, they use winter wheat to churn out a medium length whiskey with notes of honey, burnt sugar, cinnamon and caramel on the finish. It’s sensational – but I only have 120 bottles from this barrel to offer up.

Always the one with the most personality of the bunch, this is what Wine Enthusiast had to say about the 2021 release: “This extremely ripe and bold style of Pinot Noir will please those seeking such lushness. Dark in the glass, it begins with black cherry, toasty caramel and cola milk shake aromas.” The cool, coastal days and abundance of sunshine lines up perfectly for a wine that has a good natural acidic backbone, with bold fruit-forward flavors. In an easy 2021 vintage, Joe Wagner had a field day with this single-vineyard beauty.
