The company and product is a collaboration between its partners and 97,818 square miles of Wyoming. The Mead family first came to Wyoming as ranchers in 1890 and the state defines them, and their whiskey. They use the finest corn, wheat, barley, and water from the Big Horn Basin and promote Wyoming’s natural and human resources. Every drop of this bourbon is 100% Wyoming.
Wyoming Whiskey is one of the only independent distilleries that make their own whiskey. I know it seems like there are a lot small distilleries but most are actually buying bourbon from a massive distillery, finishing it in barrel, then slapping their label on it. That’s not the case at WW & it’s a really good thing too because what they do is way better.
This Special Edition Bourbon is made from 100% locally sourced grains and is bottled at 90 proof. It is designed to be smooth, easy-drinking, and slightly lighter than Wyoming Whiskey’s Small Batch bourbon with a red berry note complementing its customary vanilla and caramel flavor profile. The secret to Philippe’s tightly wound, complex Pinot Noir is a combo of ancient vines, natural farming techniques, and low yields. The wines are built to age, with incredible tension and length. And the secret to me securing his other-wordly 2017 old-vine Gevry-Chambertin can be chalked up to a great relationship and over a decade supporting superior Burgundian winemaking. The wine is scary good. The nose is wild, filled with spiced dark raspberries, red flowers, and baking spices. The palate is elegant and racy, with a dynamic tension that runs right through its minute-long finish. This is a high-toned, wound-up Pinot, that is starting to hit its prime and is really turning out to be a ‘must-have’ for true Burgundy lovers.
Today I snagged a really special single barrel that I have been working on for nearly two years now with Old Forester. It’s a 128.2 proof dynamo that will blow you away, and you’ll love every single sip. The nose is of fresh leather, baking spices & cocoa. On the pallet, this one is a monster & hits you with baked apple. brown sugar, vanilla & cinnamon. The finish goes on for two days long with notes of fig, cherries & clove. It’s big, but she’s a beauty.
In the 2020 vintage in Gevrey-Chambertin, yields were super low and temperatures were hotter than most Burgundian winemakers are accustomed. Many picked too late when the sugars were high and the fruit really ripe, but that was not the play. Still, Ann remained as cool in those hot temps as she did so many years ago in Napa, concentrating more on acid levels than sugars and picking at just the right time. This wine is absolutely singing – it’s an age-worthy beauty that should be even better in 4-7 years.
True whiskey and Knob Creek enthusiasts are going to go nuts for this one. Knob Creek Rye is as outstanding as it is rare but today we’re lucky enough to bring to you, my own single barrel of it. This is a big gold expression of Rye that holds nothing back. On the nose, there are hints of dill, rye and essence of charred oak. On the palate, you are hit over the head with baking spice, honey and freshly baked bread. The finish is certainly a warm “Kentucky Hug” that goes on forever.
