The Pabiot vineyards sit directly on the bank opposite Sancerre. The vineyards are lovingly referred to as “Pauliacum super fluvium ligerim” which translates to “Paul’s estate on the banks of the Loire”. The family grows traditional Chasselas, but despite their modest means, their Sauvignon Blanc is what has traveled the world establishing the family name.
When Pauline finally took over (the fifth generation in her case) the family business from her grandfather, she had already seen countless vintages come and go. Lately, most had been pretty good, but she still remembered the struggles her grandfather went through during the 2011 to 2014 vintages, four tough back to back years that each required an intricate tightrope walk to navigate successfully.
But even through all that, I don’t think she expected a vintage quite like 2021. The Spring started per usual with the vines slowly springing back to life after the winter’s slumber. But as soon as they started to get settled in, a severe frost set in – causing the immediate loss of half the buds – a complete disaster.
Already facing a a potential financial collapse (imagine half your year’s income gone in a flash), it got even worse. A hailstorm came through in the final days before harvest and cut the crop in half again!
I’m sure it’s of little consolation to Pauline, but when harvests are thinned, grape quality improves. So despite having 75% less wine to sell – the quality is out of this world.

Just in time, we got back Vincent Ricard’s all-time great white wine bargain. This is a crisp, clean and flat out delicious Loire Valley Sauvignon Blanc. The protege to the Silex-style of Dagueneau – who over the last 15 years has produced flawless and beloved white wines that at last count were on the wine lists of over 36 Michelin-starred restaurants. This is a great house white and one that can surely hold its own with just about everything on the table.
Elena Walch’s newly released 2022 Pinot Bianco continues to be the best example of Pinot Blanc anywhere. She’s the undisputed queen. There’s so much energy in this new release. Super light in color, with a busy nose that boasts ripe aromas of citrus, granny smith apple with a hint of freshly mowed grass. Made entirely in stainless steel, the wine is expressive, fresh and finishes as clean and tight as can be. Definitely will continue the run of 90+ scores once this one is reviewed.
The newly released Riesling Feinherb 2021 is a lively, juicy wine with an elegant bouquet of minerals, wet stone and ripe fruit. On the palate, the wine’s slight off-dry component is beautifully balanced by the steely acidity typical of the Mosel. Because this is freshly released, the fruit is vibrant and succulent and it comes in somewhere between off-dry and semi-sweet. It’s a great example of Riesling, especially at the price.
This is a super elegant Meursault from the family-run estate located in the village of Monthelie, between Volnay and Meursault in the heart of Burgundy’s Côte de Beaune. It leads with nutty aromas of brioche, fresh butter and delicate citrus and is extremely well structured, long and stylish with great purity of fruit.
