David Pickerell’s latest & unfortunately his last project has finally come to fruition. Dave was all excited about this project when we were together blending a barrel of Whistle Pig about 10 years ago. He created the mash bill, set up the distillery & oversaw the planting of all the fields. He was so pumped that this was going to be a true “field to bottle” bourbon. I suspect he never loved buying the juice for WP.
The Boss Hog himself was a legend in Kentucky & is the reason for Maker’s Mark meteoric rise & his buying of the Whistle Pig juice was always a touchy subject. He was adamant about this not being the case at Hillrock. Dave passed away suddenly at the end of 2018 leaving a giant hole in the bourbon world. I have continued to watch the goings on at HR and I can finally say that I think the “Boss Hog” would be very proud of what they’ve done.
Last month I made a barrel pick for our own Nicholas Barrel Reserve (stay tuned for that one later this year). I grabbed a great one. I didn’t leave without asking if they had any high proof bottles to offer our bourbon buyers club. The 92 proof is excellent but what I loved was the 113.2 Cabernet Cask finish.

The color is a copper/ amber with a reddish hue. The nose is caramel, vanilla & freshly made popcorn. On the palate it’s warm, but suggests a lower proof than it is, which I happen to love. The finish has undertones of vanilla, roasted pineapple & cherry. This is a beautiful Whiskey to enjoy slowly.

This is the very first 2024 installment of the limited production project from the Bourbon leaders, Booker’s and their iconic master distiller, Freddie Noe. They’re calling this batch ‘Springfield Batch’ as an homage to Booker Noe’s hometown in Kentucky where he was born and raised. This is a little bit of an older age statement than the last few in the series at 7 years, 7 months, and 8 days. It was bottled at 62% alc (124 Proof).

Today I snagged a really special single barrel that I have been working on for nearly two years now with Old Forester. It’s a 128.2 proof dynamo that will blow you away, and you’ll love every single sip. The nose is of fresh leather, baking spices & cocoa. On the pallet, this one is a monster & hits you with baked apple. brown sugar, vanilla & cinnamon. The finish goes on for two days long with notes of fig, cherries & clove. It’s big, but she’s a beauty.
Rich and creamy notes of toasted oak, vanilla, caramel, and fresh baked Bundt cake immediately flood the sense’s as soon as you pop this one open. Bottled at 100-Proof, you get a little bit of heat on the front palate followed by rich oak, leather and freshly baked bread. As it starts to open, you get some sweeter, creamy vanilla notes that cream in as well as campfire s’mores and a dash of pepper. The finish is long, and a bit spicy which leaves a memorable aftertaste and leaves you wanting more.
