On my last trip to visit Fabrice – after an incredible dinner, he took me by the estate to visit his new cave for cellaring. Little did I know, he meant an actual cave. He bought a piece of property and later discovered a cellar carved into a hillside of chalk sometime around the 9th century!?!. He had no idea it was there.
The best part was at the opening of the cave there is a pizza/bread oven dug right into the wall. I promised Fabrice I would cook him dinner in it when he completed his renovation. How awesome will that be when I get to cook in an oven 900 years old?
The most unique, interesting and flat out delicious wine we drank with Fabrice was his incredibly rare Chinon Blanc, crafted from Chenin Blanc grapes. It’s not just rare for Fabrice, it’s rare for the entire area. Chinon is a sea of red grape vines, Chenin represents just 2% of the entire production. Fabrice makes a whopping 300 cases.
I’ve told you about my love for Chenin before, it’s generally my go-to white variety whenever Melissa and I go out to dinner. The good ones have the complexity of white Burgundy matched with the acidity of Sancerre. Fabrice’s is not good, it’s great.

Every year, Pierre Sparr’s Alsacian Riesling is one of the top scoring wines in the under $20 category. There’s a consistency there and consumers know they can count on a Riesling that is aromatic, fruity, elegant, clean and vibrant. Pierre Sparr wines are extremely food-friendly especially in the widely praised 2021 vintage where quality rose to an all-time high. It’s a bone-dry beauty with layers of citrus fruits, framed by wet stone and mineral character that adds dimension.
The newly released 2022 Domaine Laroche Chablis Saint Martin has some big shoes to fill as the last four vintages have earned 92-points or higher, but the early indications are that this is line with previous vintages if not even a little bit ahead at this stage. The problem is – there’s almost none to go around with much smaller yields. Still this is beautiful and crisp, with good focus, energy and depth. I get the signature green fruits on the nose, with some Asian pear, and a hint of jasmine blossom. There’s a beautiful mineral streak that highlights this one. It’s a fantastic White Burg for the price.

It leads with nutty aromas of brioche, fresh butter and delicate citrus and is extremely well structured, long and stylish with great purity of fruit.
