Wyoming uses their own winter wheat which gives their bourbon a completely different taste. What is a wheated bourbon you ask? Well it’s a bourbon that uses wheat instead of rye to mix with the corn in the mashbill. There are a few bourbons that come from Kentucky that use wheat in their mashbills. Perhaps you’ve heard of a few of them, Weller, Old Fitzgerald, oh & Pappy Van Winkle. I love a wheated bourbon because they deliver more depth of flavor & an almost creamy mouth feel.
There’s one very important difference between WW and those Kentucky distilleries that adds complexity that cannot be matched elsewhere. The rickhouse in Kirby, Wyoming is subject to incredible weather extremes. Keep in mind that bourbon rickhouses are not heated. The winters are much colder than Kentucky, so you don’t get the same intensity of sweet oak from the early stages aging; instead the long, slow maturation lets the whiskey develop slower, resulting in increased complexity.

I bottled it at cask strength which is a whopping 117.4 proof. This bottle is for serious bourbon drinkers only.
Bouquet: Tree Sap, Orange, Burnt Honey, Caramel
On the palate: Honey, burnt orange, freshly baked bread, cinnamon & light caramel
Finish: really long and smooth with a slow burn and a nice fall spice that will trick you into thinking it’s a lower proof. In reality, it’s a massive 58.7% alc single barrel that will knock your socks off, and you’ll absolutely love it.

Everybody in the whiskey world knows Baker’s. They have one heck of a reputation. They only make one two things their 7 year and the 13-year, and their 7-year single barrel straight Bourbon just means it is aged for at least 7 years. I was just allocated 18 bottles, and ours is special – it happens to be aged 8 years and 1 month! Bottled at the signature 107 Proof, this is a flat-out delicious bottle of bourbon from the distillery that makes no two barrels alike. This one hits with notes of Toffee, caramel, peanuts and black pepper. The mouthfeel is full and distinct with dried fruits joining the party and a smooth, lengthy finish.
This is the very first 2024 installment of the limited production project from the Bourbon leaders, Booker’s and their iconic master distiller, Freddie Noe. They’re calling this batch ‘Springfield Batch’ as an homage to Booker Noe’s hometown in Kentucky where he was born and raised. This is a little bit of an older age statement than the last few in the series at 7 years, 7 months, and 8 days. It was bottled at 62% alc (124 Proof).
Today I snagged a really special single barrel that I have been working on for nearly two years now with Old Forester. It’s a 128.2 proof dynamo that will blow you away, and you’ll love every single sip. The nose is of fresh leather, baking spices & cocoa. On the pallet, this one is a monster & hits you with baked apple. brown sugar, vanilla & cinnamon. The finish goes on for two days long with notes of fig, cherries & clove. It’s big, but she’s a beauty.

This is a Nicholas Faithful favorite. Even though it’s technically a non-vintage it was last disgorged in the 2020 vintage. La Cravantine, is a sparkling rosé of 100% Cabernet Franc, bone-dry, super fresh and with bubbles so tiny and fine, it puts most “real” Champagne to shame. Appealing strawberry and mineral scents are encased in a firm structure with a dry and spicy quality in the palate. This wine is incredibly versatile – perfect with just about any fish, fried food, or do like I do and enjoy it on it’s own.
