Wyoming uses their own winter wheat which gives their bourbon a completely different taste. What is a wheated bourbon you ask? Well it’s a bourbon that uses wheat instead of rye to mix with the corn in the mashbill. There are a few bourbons that come from Kentucky that use wheat in their mashbills. Perhaps you’ve heard of a few of them, Weller, Old Fitzgerald, oh & Pappy Van Winkle. I love a wheated bourbon because they deliver more depth of flavor & an almost creamy mouth feel.
There’s one very important difference between WW and those Kentucky distilleries that adds complexity that cannot be matched elsewhere. The rickhouse in Kirby, Wyoming is subject to incredible weather extremes. Keep in mind that bourbon rickhouses are not heated. The winters are much colder than Kentucky, so you don’t get the same intensity of sweet oak from the early stages aging; instead the long, slow maturation lets the whiskey develop slower, resulting in increased complexity.
Nicholas Notes:
I had this bottled at cask strength and it came in at a fairly whopping 117 proof. This is another of those bottles for the serious bourbon drinkers.
Bouquet: Freshly Baked Bread, Orange Rind, Honey, Syrup
On the palate: Honey, burnt orange, caramel and, cinnamon with winter spice.
Finish: Long and smooth with a nice slow burn that tapers off with smooth notes of spice. You never feel the heat, but at 58.5% alc. it is definitely one that will pack a big punch – but you’ll absolutely love it.

Finish: medium length with more fall spice with a slow burn that will trick you into thinking it’s a much lower proof. Have another & forget about life for a while & dream about being in Wyoming sans face mask.

I was given fourteen samples to taste through, and found that the 5th sample was the winner. This one is not for the faint of heart. It was a tiny barrel of just 40 six-packs, but the quality here was out of the world. It checks in at 110 Proof (55% alc.) and has harmonious sweet and savory notes that dual throughout this super long and memorable finish. It’s worth selling less bottles to bring you one this good – you guys are going to absolutely love it.
Rich and creamy notes of toasted oak, vanilla, caramel, and fresh baked Bundt cake immediately flood the sense’s as soon as you pop this one open. Bottled at 100-Proof, you get a little bit of heat on the front palate followed by rich oak, leather and freshly baked bread. As it starts to open, you get some sweeter, creamy vanilla notes that cream in as well as campfire s’mores and a dash of pepper. The finish is long, and a bit spicy which leaves a memorable aftertaste and leaves you wanting more.
This is the first release of its kind and was just announced last week. I snagged six bottles as soon as I could. It’s a U.S. only release, and it remains to be seen if there will be others. The Redbreast Kentucky Oak Edition is triple distilled in copper pot stills and matured in American Bourbon barrels and Spanish Oloroso Sherry butts. Then it’s finished for a minimum of 4 months in hand selected, air-dried American Oak from the Taylor family farm in Kentucky.
This is a very rare single barrel Bourbon Whiskey to make its way to Jersey. Maple syrup, butterscotch, caramel & brown sugar with a palate of caramel apple, roasted almond, ripe banana and graham crackers. This one has a full mouthfeel with a nice creamy middle. The finish here lingers with just the right amount of burn. This was born on 2/3/2017 and bottled at 102 Proof. This is a great bottle of Whiskey.
