This one is a collaboration with renowned pastry chef Jordi Roca of the three Michelin star-rated restaurant El Celler de Can Roca in Girona, Spain. This exciting release brings the worlds of chocolate and whisky to life. To create the first limited edition whisky in a new annual release series, The Macallan Whisky Maker, Polly Logan embarked on a unique journey to Spain, where she dove head first into the world of chocolate, exploring the chocolate-making process and uncovering the distinctive flavor profiles at Casa Cacao.
Polly worked with Jordi Roca, owner of the famed chocolate boutique and hotel, Casa Cacao and the youngest of the acclaimed Roca brothers. As part of the exploration, she also spent time with master chocolatier of Casa Cacao, Damien Allsop. They developed a gorgeous and seamless blend that boasts notes of dark chocolate to accompany cinnamon, vanilla, dates and a splash of honey. I have just six bottles to go round.
“Chocolate and whisky go great together, and there are chocolate flavors to be found in whisky, so this new Macallan should be a treat for dessert lovers.” – The Whisky Advocate.

Back in the day, Widow Jane used to be a staple at Nicholas Wines. But as its popular has gone crazy, it’s been tougher and tougher to get my hands on any. This is a hyper small batch bourbon that was aged for a minimum of thirteen years, non-chill filtered and proofed with Widow Jane’s signature limestone mineral water from the Rosendale Mines in New York. It’s a doozy of a bottle at 93 Proof and has notes of vanilla, nutmeg, graham cracker and sweet tobacco.
The third release of three batches from Booker’s Bourbon 2023 Collection is Booker’s Batch 2023-03 ‘Might Fine Batch.’ These mini-releases have become extremely popular, and for good reason. “The vanilla and brown sugar sweet notes come through very well from the white oak barrels this bourbon aged in for over seven years. The taste is great and full bodied; when I added a splash of water, it opened up some great flavors, with a finish that gives a lovely “Kentucky Hug. My Dad would say that this is a Mighty Fine batch of Booker’s.” -Fred Noe
Today I snagged a really special single barrel that I have been working on for nearly two years now with Old Forester. It’s a 128.2 proof dynamo that will blow you away, and you’ll love every single sip. The nose is of fresh leather, baking spices & cocoa. On the pallet, this one is a monster & hits you with baked apple. brown sugar, vanilla & cinnamon. The finish goes on for two days long with notes of fig, cherries & clove. It’s big, but she’s a beauty.
True whiskey and Knob Creek enthusiasts are going to go nuts for this one. Knob Creek Rye is as outstanding as it is rare but today we’re lucky enough to bring to you, my own single barrel of it. This is a big gold expression of Rye that holds nothing back. On the nose, there are hints of dill, rye and essence of charred oak. On the palate, you are hit over the head with baking spice, honey and freshly baked bread. The finish is certainly a warm “Kentucky Hug” that goes on forever.
