Wyoming uses their own winter wheat which gives their bourbon a completely different taste. What is a wheated bourbon you ask? Well it’s a bourbon that uses wheat instead of rye to mix with the corn in the mashbill. There are a few bourbons that come from Kentucky that use wheat in their mashbills. Perhaps you’ve heard of a few of them, Weller, Old Fitzgerald, oh & Pappy Van Winkle. I love a wheated bourbon because they deliver more depth of flavor & an almost creamy mouth feel.
There’s one very important difference between WW and those Kentucky distilleries that adds complexity that cannot be matched elsewhere. The rickhouse in Kirby, Wyoming is subject to incredible weather extremes. Keep in mind that bourbon rickhouses are not heated. The winters are much colder than Kentucky, so you don’t get the same intensity of sweet oak from the early stages aging; instead the long, slow maturation lets the whiskey develop slower, resulting in increased complexity.
Nicholas Notes:
I had this bottled at cask strength and it came in at a fairly whopping 117 proof. This is another of those bottles for the serious bourbon drinkers.
Bouquet: Freshly Baked Bread, Orange Rind, Honey, Syrup
On the palate: Honey, burnt orange, caramel and, cinnamon with winter spice.
Finish: Long and smooth with a nice slow burn that tapers off with smooth notes of spice. You never feel the heat, but at 58.5% alc. it is definitely one that will pack a big punch – but you’ll absolutely love it.

Finish: medium length with more fall spice with a slow burn that will trick you into thinking it’s a much lower proof. Have another & forget about life for a while & dream about being in Wyoming sans face mask.

Feudo Montoni has been one of the best producers in Italy for literally hundreds of years, most notably for their work with Nero D’Avola grape in Sicily. It’s a gorgeous expression at such a good price. The 2020 “Lagnusa” is the perfect pizza or Thanksgiving wine with juicy black fruits, grippy tannins and a wonderful, fresh and herbaceous finish. Vinous Media gave the wine 92 points and raved, calling it “remarkably fresh yet long, leaving the mouth watering while still resonating on hints of blackberry.” You’re going to love this.
The third release of three batches from Booker’s Bourbon 2023 Collection is Booker’s Batch 2023-03 ‘Might Fine Batch.’ These mini-releases have become extremely popular, and for good reason. “The vanilla and brown sugar sweet notes come through very well from the white oak barrels this bourbon aged in for over seven years. The taste is great and full bodied; when I added a splash of water, it opened up some great flavors, with a finish that gives a lovely “Kentucky Hug. This is a sensational single-vineyard Merlot made from incredibly tiny clusters, full of some of the most elegant, intensely structured fruit from high atop Sonoma Mountain. Beautiful weight and balance with aromas of blueberries, black currants, sage and a hint of cocoa. It’s got a full, plush mouthfeel, pristine and vibrant fruit and a wonderful smooth finish. Thanks to Chad’s big bet on himself, he was able to make a knockout Sonoma Mountain beauty, without the need for any middleman, helping us to enjoy one of his best creations at an outstanding price.
We’re nearing the end of what was a flawlessly crafted, high energy coastal Chardonnay release from one of California’s hottest spots. It’s still every bit as bright and refreshing as you could want and it hits with clean, pristine green apple fruits, pears and citrus notes with a hint of that limestone-influenced minerality. It’s a fantastic wine for all seasons, the perfect pair with mixed seafood, summer tomatoes, corn and freshly caught fish.
