In the winter of 2016, sommelier Raj Vaidya, Daniel Boulud’s Uber-talented wine-director, determined to source a single American Pinot Noir to be featured in each of Daniel’s NYC hotspots (Bar Boulud, Daniel, DB Moderne and Cafe Boulud). Vaidya, while always perfectly polite, is extraordinarily critical at the tasting table. After several months of tastings, Raj settled upon a Willamette Valley Pinot Noir, crafted by Anne Sery-Martindale, a graduate of the University of Bordeaux’s graduate program in Enology, chaired by the late Denis Dubourdieu.
For three years, Vaidya worked closely with Sery-Martindale in the crafting of Trousse-Chemise Willamette Valley Pinot Noir “Cuvee Daniel Boulud,” wowing diners from downtown to the Upper East and West side. In the fall of 2019, Vayida locked into 10 barrels of Trousse-Chemise, just enough to take him through the year.

The NY distributor had two choices. A) soak off the labels, apply for a new label with the TTB…or B) call me at Restaurant Nicholas. He chose option B. And I took every bottle remaining.

This is a sensational single-vineyard Merlot made from incredibly tiny clusters, full of some of the most elegant, intensely structured fruit from high atop Sonoma Mountain. Beautiful weight and balance with aromas of blueberries, black currants, sage and a hint of cocoa. It’s got a full, plush mouthfeel, pristine and vibrant fruit and a wonderful smooth finish. Thanks to Chad’s big bet on himself, he was able to make a knockout Sonoma Mountain beauty, without the need for any middleman, helping us to enjoy one of his best creations at an outstanding price.
Corzano e Paterno is an absolute oasis in the rolling hills of Chianti, a must visit if you go to Tuscany. The wine there is absolutely killer. The Corzanello 2006 is a gem – one from the back of the cellar that I took away many years ago. It’s a gorgeous blend of Sangiovese and Cabernet Sauvignon and even though it has aged gracefully for nearly two decades, it still has plenty of life. I’d drink it now or over the next 3-5 years.

Feudo Montoni has been one of the best producers in Italy for literally hundreds of years, most notably for their work with Nero D’Avola grape in Sicily. It’s a gorgeous expression at such a good price. The 2020 “Lagnusa” is the perfect pizza or Thanksgiving wine with juicy black fruits, grippy tannins and a wonderful, fresh and herbaceous finish. Vinous Media gave the wine 92 points and raved, calling it “remarkably fresh yet long, leaving the mouth watering while still resonating on hints of blackberry.” You’re going to love this.

Xavier Vignon’s brand spanking new CDR 100% is a thing of beauty. It’s already got a blessing from Robert Parker’s Wine Advocate who described this wine as, “Full-bodied, concentrated and supple”. This is a gorgeous and intricate blend that features all of the Southern Rhone appellations. This year, the blend was 40% Grenache, 25% Mourvedre, 15% Syrah, 7% Cinsault, 7% Marselan, 6% Terret Noir. Nobody can do it like the mad scientist, Xavier Vignon.
