The project involves working with some of the best vineyards to produce a lush, well balanced, and fruit forward Cabernet Sauvignon. In 2011, Ray Signorello started the TRIM project with a few friends to offer a well-crafted California Cabernet Sauvignon to the market for a great price. He is proud to bring his more than 30 years of experience to this project. Offering sophisticated flavor with sensible value, the TRIM Cabernet Sauvignon is a wine that shows his love and passion for wine.
The new release, the 2018 edition is a lush, juicy Cabernet with soft, silky tannins and a nice acidic backbone. The nose offers plush cherry and strawberry fruit, as well as licorice, herbal tea, chamomile, cinnamon and vanilla.

This is Joe Wagner and Quilt’s inaugural Red blend called Threadcount. It is a total knockout at the price point for this style of wine. It’s a big voluptuous wine and very fruit forward. The nose is straight up dark chocolate dipped raspberries and it tastes of fresh-baked blueberry pie, spice, and a touch of toffee. It’s the kind of quality blend that you’ve come to expect from the family behind Caymus.
In the 2020 vintage in Gevrey-Chambertin, yields were super low and temperatures were hotter than most Burgundian winemakers are accustomed. Many picked too late when the sugars were high and the fruit really ripe, but that was not the play. Still, Ann remained as cool in those hot temps as she did so many years ago in Napa, concentrating more on acid levels than sugars and picking at just the right time. This wine is absolutely singing – it’s an age-worthy beauty that should be even better in 4-7 years.
Winemaker Pascal Sirat consistently puts out some of the best value Bordeaux in the region but he may have outdone himself in what was a stellar 2019 vintage throughout the region. Just south of Pomerol, the vines at Panchille borrow deep in the soil. The resulting wines are ripe but fresh, with an aromatic complexity and stony finish usually reserved for wine twice the price. Daniel Boulud tells me it’s been the hottest bottle of wine at Bar Boulud for over a month, so I figured I’d better hurry up and secure my allocation! Don’t miss it.

Drinking Window 2022 – 2031” and another 90 point score from James Suckling. This is a home run value – especially for the price.
