The Hibiki brand was introduced to the world in 1989 and since then has been embraced as the paragon of The Art of Japanese Whisky, the very product of Japanese nature and people. It is not only Japan’s most highly awarded blended whisky, but also among the most prestigious and honored whiskies in the world. Hibiki is a gorgeous blend of 10 different malt and grain whiskies from House of Suntory Whisky’s Yamazaki, Hakushu and Chita distilleries.
Meaning “Resonance” in Japanese, Hibiki embodies the Suntory philosophy To Create Harmony with People and Nature. As a House of Master Blenders, the House of Suntory has gone to great lengths to explore the breadth and depth of what Harmony can mean for a blend. Hibiki 30 Year Old and Hibiki Blossom Harmony celebrate this particular kind of Harmony.
This was bottled at 86 Proof. It has a great amber hue with a nose that combines cherry blossom, flower blossoms, dried cherries and malt aromas. The palate is silky smooth and expansive with no depth of flavors. It’s medium to full bodied with notes of pear, honey, mochi and umami flavors. The finish is incredibly long-lasting and rich with brilliant aftertaste that you never want to dissipate.

The 2018 Brunello di Montalcino from Aleramici hits all the right notes. It has a nice medium weight to it with easy drinking cherry, creme de cassis and purple fruits. It’s multi-dimensional with waves of some dark plum and blackberry with more sage and spice components as well that compliment it perfectly.
In the 2020 vintage in Gevrey-Chambertin, yields were super low and temperatures were hotter than most Burgundian winemakers are accustomed. Many picked too late when the sugars were high and the fruit really ripe, but that was not the play. Still, Ann remained as cool in those hot temps as she did so many years ago in Napa, concentrating more on acid levels than sugars and picking at just the right time. This wine is absolutely singing – it’s an age-worthy beauty that should be even better in 4-7 years.
The 2022 Juliana Layla Pinot Noir: named after our now 13-year old daughter, her latest in a line of worthy Pinot Noirs. This is a delicious and super fresh cuvee that leads with cherry cola notes, blackberry juice, and violet notes with a hint of baking spice. It’s a pure-fruited, high-toned Pinot Noir with a great mid-palate, silky tannins, and a lot of focus. This is the very last of our two pallets. They can’t make anymore!
Basil Hayden’s Kentucky Straight Bourbon is one of those go-to entry level whiskies that you can always count on to deliver. A product of the Beam Distilling Co., the Kentucky Straight checks in at 80 Proof and has a robust, rich flavor that hits you in waves. Charred oak, with notes of honey, caramel and fresh baked bread flood the senses with a brown sugar dominant palate that also features creme brulee notes and a hint of pepper. The finish goes on for a while, and leaves lingering notes of dried fruit, and cocoa.
