Elijah Craig was a baptist preacher who is credited by some as pioneering the process for “true Kentucky bourbon” in 1789. He is credited with being the first to put his distillate into charred oak barrels, one of the key requirements for a whiskey to be classified as bourbon.
This is what the distillery says about the process of making this relatively new release: “The process begins with fully matured Small Batch, which is dumped and then re-entered at barrel proof into a second, custom toasted new oak barrel designed in partnership with Independent Stave Company. Made with 18-month air dried oak, the finishing barrel is first toasted and then flash-charred using a moderate toast temperature and toast time. An extensive research and development process resulted in a final barrel toast profile bringing forward dark sugar flavors within the wood to create a balance of smokiness and sweetness after months of finishing.”
It’s a lot of work, but the end result is well worth the deliberate process. It exudes notes of campfire, s’mores, some dried fruits and a hint of caramel. On the mouth, a burst of cocoa paired with some spices, and a splash of vanilla and oak. It’s incredibly smooth, no rough edges and quite enjoyable to sip neat or with a single cube. I’m glad they decided to make this part of their regular lineup moving forward… it deserves to be.

Rich and creamy notes of toasted oak, vanilla, caramel, and fresh baked Bundt cake immediately flood the sense’s as soon as you pop this one open. Bottled at 100-Proof, you get a little bit of heat on the front palate followed by rich oak, leather and freshly baked bread. As it starts to open, you get some sweeter, creamy vanilla notes that cream in as well as campfire s’mores and a dash of pepper. The finish is long, and a bit spicy which leaves a memorable aftertaste and leaves you wanting more.
The juice here is so pure and elegant, it tastes much more like a $80/bottle of Tequila than one going for half the price, but that’s why I love these single barrel deals so much. The value is insane. This Reposado spent just under 12 months in used bourbon barrels. Golden brown with fresh agave, oak & vanilla. Remarkably smooth finish. This is one of those oddball tequila’s that is good enough to just sip on the rocks but cheap enough to use to make one hell of a margarita.
Back in the day, Widow Jane used to be a staple at Nicholas Wines. But as its popular has gone crazy, it’s been tougher and tougher to get my hands on any. This is a hyper small batch bourbon that was aged for a minimum of thirteen years, non-chill filtered and proofed with Widow Jane’s signature limestone mineral water from the Rosendale Mines in New York. It’s a doozy of a bottle at 93 Proof and has notes of vanilla, nutmeg, graham cracker and sweet tobacco.
I was given fourteen samples to taste through, and found that the 5th sample was the winner. This one is not for the faint of heart. It was a tiny barrel of just 40 six-packs, but the quality here was out of the world. It checks in at 110 Proof (55% alc.) and has harmonious sweet and savory notes that dual throughout this super long and memorable finish. It’s worth selling less bottles to bring you one this good – you guys are going to absolutely love it.
