Since the day we opened the doors of Restaurant Nicholas, Diebolt-Vallois has been our house champagne and the wine that has been poured for any celebration. Melissa and I first enjoyed this wine in Paris at many of the Michelin two and three star restaurants that buy most of the wine Diebolt produces. We loved the elegant aromatics, its pristine fruit and the crisp, mineral finish that screams for food.
We loved it so much, we asked Jacques Diebolt to bottle a special cuveé for the restaurant, one that would always display the characteristics that we fell in love with on that first trip to France. He happily agreed and continues to do so to this day. Unfortunately, that bottling already sold out in a hurry, so while we wait for the next batch, here’s the original.
So, regardless of your celebration, be it New Year’s Eve, a special anniversary or milestone birthday, it doesn’t matter, I can’t think of a better wine to make it truly special.

Perfect for creamy dishes that include mushrooms or chicken, also an excellent match for shellfish, seafood and dried meats.
91 Points, Vinous
Eric Guido of Vinous just reviewed a number of Bele Casel wines last week and lobbed heaps of praise for each and every one of them. For this one in particular, he wrote a great review that I agree with on multiple fronts. For one, he called out ripe orchard fruits and candied citrus which I think helps set this one apart. In the dry category, you rarely get so much pure, juicy fruit as you do in this one. He also noted the “chalky minerality’ before calling out ‘the amazing length and freshness’ of this wine which called an ‘excellent entry into the dry category’.
Glistening pale yellow-green to the rim, infused with mouth-watering aromas of ripe apple, pear and quince, and crushed almonds with honey and rich creamy middle and a fantastic rush of acidity and minerality that are present throughout. A calling card of Bonhomme’s Vire-Clesse, if you closed your eyes and took a sip, it would have you convinced you were drinking Meursault at least a 3x price tag.
96 Points, James Suckling
“The moment you move the glass close to your nose the extraordinary perfume of this great Cornas is overwhelming. Deep, meaty and smoky, yet brimming with blue fruits and violets, how can you resist? What grace and elegance this has on the pristine and light-footed palate. Really concentrated, but only medium-bodied, this is a masterpiece of filigree at the breathtakingly fresh and precise finish. Drink or hold.”
Our all-time favorite Chardonnay is back for its 30th anniversary bottling in the excellent 2022 vintage. The Wagner Family’s Santa Lucia Highlands Reserve slam dunk. This is one that Nicholas Wines readers can’t get enough of – it always delivers. It leads with an inviting nose with fresh citrus and lemon notes. It’s always juicy, bright and well-balanced – it’s classic Caymus, rich and hedonistic with a wonderful creaminess. This is quintessential California Chardonnay.
